Cashew and Orange Ginger Dressing Recipe



 

Generally, I keep my salads pretty simple. I usually toss everything into a bowl and drizzle a little olive oil and lemon juice on top. Once I sprinkle on the salt, I’m done. But this dressing recipe is really simple to make and it offers a welcomed change to the norm. Just throw everything into the blender and whiz until smooth, and you’re done!

 

 

Cashew and Orange Ginger Dressing

 

1 Cup cashews, soaked for at least an hour

2 pitted Medjool dates

1 peeled orange, quartered

1 small onion, chopped

1-inch long Piece of Ginger

1 Tablespoon Soy Sauce, Nama Shoyu, or Coconut Aminos

½ teaspoon onion powder

½ teaspoon dried oregano

½ teaspoon dried parsley

½ teaspoon sea salt, or to taste

1 Tablespoon lemon juice

¾ cup water

 

1.       Add all the ingredients to a high-speed blender and blend until smooth.

2.       If desired, add more water to make a thinner dressing.

3.       Enjoy!
