Marshmallow Cereal Bars Recipe



As a child, my mother and I would make Rice Krispie Treats to leave out for Santa. We would also make them for playdates, to share with my class or just

because. Now-a-days, my marshmallow of choice doesn’t have gelatin, and the

margarine doesn’t contain dairy products. I’ve managed to veganize almost all

of my favorite foods from my childhood to share with my children. I’ll share

the recipe for marshmallow cereal bars so that you can share with your little

ones too.


I’ve listed all of the products I used in the ingredient list. You may choose

to use puffed rice cereal, or some other cereal. Also, I love vanilla

extract, but I did wonder what other flavorings or extracts would taste like.

If you decide to throw in something unique, let us know. We’ll try it too!

The point is that you can decide to follow our recipe to the letter, or you

can make it your very own. It’s cool! Be creative!




INGREDIENTS


3 Tablespoons of Earth Balance margarine


1 10 oz. package of Dandies vegan marshmallows


¼ teaspoon sea salt


1 teaspoon organic vanilla extract


5 cups Cascadian Farm Fruitful O’s cereal


Line a 13x9x2 inch pan with parchment paper or

lightly spray or coat with cooking spray or vegetable

oil.


1. In a large saucepan, melt marshmallow over low heat.


2. Add margarine and salt, stirring until marshmallows are completely

melted.


3. Remove from heat, stir in vanilla.


4. Working quickly, stir in cereal.


5. Press into prepared pan.


6. Allow to cool, then cut into uniform sized squares.
